Part of our Saturday routine is that Randy will ask me if I’d like to make breakfast, not because he’s unwilling to make breakfast himself but because I really like breakfast food. Normally, the decision comes down to how I want to fix some eggs. This is a difficult choice as I’m not sure how I best like my eggs prepared. I should do what Julia Roberts’ character in the movie “Runaway Bride” did — prepare eggs in their most popular variations and do a tasting to see what I like best. If it wouldn’t wreak havoc on my cholesterol levels, I’d strongly consider doing that.
I grew up eating eggs over-easy with ketchup sopped up with buttered white toast. There’s at least one picture of me as a baby on my mom’s lap, this breakfast in front of me as well as smeared across my smiling face. Fried eggs and SPAM (of course!) were also staples.
Right now, I tend to crave eggs Benedict the most. Who can resist the fattening hollandaise sauce poored over poached eggs, Canadian bacon and an English muffin? If only McDonald’s could make a reasonable facsimile of hollandaise sauce to go with their Egg McMuffins, I’d be there at least once a week. Well, it’s probably better for waistlines across the country that they’re expanding their salad selections instead.

I am salivating at that picture!! I like ketchup on my eggs too, but absolutely love eggs Benedict! I usually order that for breakfast at restaurants when we are traveling, and I like to make it at home (when I have the time). I’ve eaten it so much I even fancy myself a bit of a conniseur (but I’ll refrain from waxing on poaching perfection here). Reading your post makes me want to have eggs Benedict right now………
Guess what I made for dinner last night? Eggs Benedict. After writing about it, I couldn’t get it out of my head. I may try fake hollandaise next time though as I used a cup of unsalted butter to make the real stuff. My left ventricle is probably slamming shut.

Fake hollandaise sauce is disgusting!!!! I know from experience.
I mean, I know you’re kind of attached to your left ventricle and all, but I’m telling you it’s really gross!
Speaking of high fat and cholesterol, we had BLT’s. Yes, with butter, mayo, and bacon is there any other way? There was the lettuce and tomato, so I’m sure it all evened out (wink!).
